With another busy week coming up, I got some food prep done over the weekend again to make for an easier week of cooking dinner. Here’s the plan for this week:
Sunday: Homemade pizza (with grilled chicken and veggies)
Monday: Salmon, green beans, sweet potatoes
Tuesday: Grilled chicken, Summer pasta salad with baby greens
Wednesday: Roasted chicken and veggies (zucchini, squash, asparagus)
Thursday: Stir Fry (chicken, peppers, onion, broccoli, brown rice)
Friday: Pasta, Turkey Meatballs, Salad
Saturday: Crock Pot Beef and Broccoli (we planned to make this 2 weeks ago, but went out to eat instead)
I prepped the pasta salad:
Cut and froze chicken for meals later this week:
Rob grilled the chicken on our indoor grill for the pizza tonight and to have with the pasta salad on Tuesday:
Washed kale for smoothies:
I also prepped and bakes for snacks/desserts this week.
Cleaned and sliced strawberries:
Oatmeal Cookies – I used chocolate chips
I couldn’t resists making these again: Black Bean Brownies
As for workouts this week, they will probably looks very similar to last week, but I am planning to cut back my mileage a little. (I have been building up since the marathon 4 weeks ago, and reached 30 miles last week).

Some weekends I dont have any time to plan or prep, but when I have time and I know I have a busy week coming up, I force myself to get it done. It can be annoying and time consuming but Im always glad I did it!

I’m sure that having kids makes it really challenging! I try to plan as much as possible, but some weeks it just doesn’t happen. Luckily we usually keep some frozen leftovers in the freezers, just in case:)

Totally rocking the food prep! I was annoyed / amazed that I AGAIN underestimated our spinach / kale / greens usage between my smoothies and Lisa’s paleo salads …

It can be hard to estimate stuff like that! I know some weeks I use all the greens I buy (or run out halfway through the week) and other weeks I have some leftover. I find that keeping what I can in the freezer helps because it will last longer, so I dont worry if I buy too much because I know Ill use it at some point.
As for the weather, its certainly warm but Im not quite ready to start complaining about it yet! This morning I kept thinking about how I won’t have to worry about ice for at least 6 months, and how much easier it is to toss on shorts and a tank top before running:)

I always prep my meals for the week on Sunday, but never snacks. (Usually too tired) But yours look so good, I might just have to force myself to get those in too!!! #bestfoot

I use to not prep snacks but I found myself eating so many store-bought granola or protein bars. When I have the time I like prepping snacks so I am eating less processed food and saving some money, too!

The meals look great! I think I might give those granola bars a try. My boyfriend I were just talking about making some protein granola bars. These seem perfect!
