Last weekend was back to normal with meal planning and prep…sort of. Remember how we went to Whole Foods and it was crazy? Well, after that we went to Fresh Market to get things we couldn’t find at WF and then couldn’t imagine going to a third grocery store, so we tried to get all our groceries in those stores (plus Walgreens). So I purposely didn’t get some things on my list because they were way more expensive than in our usual grocery store. Therefore, I had to adjust my plan for the week a bit. Then to make things even more complicated, we didn’t remember that it was lent/ash Wednesday until Wednesday night. We happened to be eating fish that night anyway but I totally had meat at breakfast and lunch without realizing it. I also ended up picking up salmon later in the week for Friday.
Meal Plan 2/15-2/21:
Sunday: Chicken fajitas using this recipe
Monday: Salmon, roasted baby potatoes, asparagus
Wednesday: Tilapia, broccoli, baked potatoes
Thursday: Burgers, sweet potato fries, mixed veggies
Friday: salmon, quinoa, spinach
Saturday: Pasta, turkey meatballs, salad
Lunches: Salads with roasted veggies and grilled chicken, leftovers
Snacks/Dessert: Apples, berries, baby carrots, almond butter, chocolate chip banana bread squares
I started my prep by cutting and roasting broccoli and sweet potatoes. Then I did the rest of the cutting/rinsing/storing while they were in the oven. After that all I had left was the frittata and banana bread! I planned to make other snacks this week, but couldn’t find coconut milk in the store, which was needed for the recipes I was planning to make.
Here is the prep I did last weekend:
-roasted broccoli and sweet potatoes
-cleaned/cut/stored cucumbers, peppers, broccoli, cauliflower, carrots, raspberries, strawberries, blueberries, and asparagus
-Rob grilled chicken on indoor grill
-baked banana bread
It sounds so easy when I write it all out, but it still took over an hour!
