On-The-Go Breakfast Recipe Round-Up

Lately I have had zero time in the morning to cook breakfast before work, and it’s only getting tougher as my runs are getting longer. I’ve made it a point to always prepare something over the weekend that I can grab for breakfast during the week. It’s not uncommon for me to eat breakfast as I am getting ready or to eat something quickly after my run and then have something else when I get to work. 

Here are some recipes that I have either already tried or am planning to try to switch things up.

    I do wind up cooking every morning but if I didn’t have to for my kids I’m not sure I’d be as motivated just to do it for myself. When runs are longer in the morning i find myself rushing and more frazzled than usual though. Some yummy ones here 🙂

      I think after a long or hard run its difficult to take the time to cook breakfast- I have no energy and just want to eat ASAP!

    It’s breakfast on the go Mon-Fri in our house. With a little prep work, not problem. The sweet potato breakfast looks amazing!

    I’ll take one of each, please. Right now, breakfast is split into two parts, otherwise I would never make it. Pre and post workout. And I’m talking Taper on the blog today too!

    I love making frittatas ahead and grabbing a slice to eat once I’m at my destination (now that’ll be work), and I often do muffins to pair with fruit and yogurt!

    Since I have a toddler, every breakfast needs to be a grab and go option. I like to make batches of overnight oats for me and pancakes for her for easy breakfast options.
    That stuffed sweet potato recipe looks delicious!

    These all look really yummy. The only problem is I am too lazy to make this stuff! If I wanted to have the time to make it, I could. I am just very utilitarian and un-fancy when it comes to my breakfasts. I will eat a chicken sandwich in the car on the way to work after I lift. I never feel like eating chicken at 7am but it gets the job done!! Haha. Other than chicken, I am a cereal girl in the morning OR if I have a few extra minutes… dippy eggs!!

      It does take some work, but for me its worth it because cereal just doesn’t fill me up. I have never thought to eat chicken for breakfast!

    I am all about easy breakfasts! I sometimes makes smoothies the night before, and I’m also a big fan of overnight oats!

    Easy, delicious breakfasts are the best! There recipes looks great. I tend to stick to the same things during the work week and branch out on the weekends sometimes so these are giving me some great ideas 🙂

    Loved your guest post on Meredith’s blog!! I usually cook a simple breakfast every day, either eggs, oatmeal, or a smoothie. It’s quick and easy, but I like being able to eat at home as I’m usually eating lunch while working every day. Breakfast is totally my favorite meal !

      I wish I had just a little more time to eat breakfast in the morning, but I get ready for work in 20 minutes and eat while I am standing in the kitchen making coffee to bring to work with me. We need to leave the house by 7:15, and I can’t imagine getting up any earlier than I already do!

    I used to eat overnight oats religiously when I was in school/working. Now that I have my son I have to cook anyway so I usually make myself something. But those PB oatmeal bars look amazing!

    Great list! I usually just have oatmeal for breakfast. But if I’m short on time and need to grab something and go, I like smoothies or overnight oats that I just take into the office. Might have to try some of these! That twice baked breakfast sweet potato is especially calling my name right now.

      Smoothies are definitely a go-to for me as well. I haven’t done overnight oats in a while, I should try them again!

    You know me well enough by now to know that I’m not a huge fan of recipes and stuff because I suck so hard at cooking. But this post is something I really really need right now. Breakfast is such a gong show around here and I need ideas, desperately. Those twice baked sweet potatoes look perfect, and the frittatta and the peanut butter oatmeal bars. DOING IT.

    I have a protein shake in the morning, its quick and easy and can go in the car with me. on the weekends though we always cook breakfast, its my favorite meal because it can be sweet, savory or BOTH!

    I’m going to try the peanut butter oatmeal bars. Those look delicious! I practically never cook breakfast, even on the weekends. I used to rely primarily on granola, yogurt, and fruit but lately I’ve been doing the smoothie thing. Lately I’ve sort of been craving something chewier or denser to go with my coffee, so those bars seem like they might hit the spot!

This is my first big marathon in 10 years, my first time traveling to a race in 10 years, and my first time spending the night away from my kids. And of course I’m tapering so I can’t run off the nerves 🙃 #marathontraining #taper #richmondmarathon
Looked like fall, felt like summer 🍁 I was definit Looked like fall, felt like summer 🍁 I was definitely overdressed for this run but it was nice to not wear gloves or a headband! This was the run I needed a week before my marathon. After last week’s disaster of a long run it felt great to just run an easy 10 miles. (And these days 10 miles feels like nothing). I think I figured out the fueling and shoes 🤞so nothing left to do but take it easy, carb load, and get in the right mindset! Is it unseasonably warm where you are?

Yesterday’s long run was not what I wanted it to b Yesterday’s long run was not what I wanted it to be. The plan was to take the day off from work, head to the trail where I could run 10 uninterrupted miles at MP (16 total) and practice my race day fueling while wearing my race day shoes.

What actually happened? All week I was stressed about this run and the condition of the trail. We had lots of rain on Thursday, and Friday was forecasted to be very windy. I tried to get in the best mindset possible, reminding myself that I won’t be able to control the conditions on race day. Meanwhile, I haven’t been sleeping well thanks to my 2 year old waking up every night, and my watch has been basically telling me that I’m losing all my fitness and need a week of recovery.

While I started the run feeling pretty good, after 11 miles (7 at MP) my stomach turned and I almost got sick on the side of the trail. I just couldn’t recover from that. The best I could do was run the rest of the miles easy, and needed some walk breaks. On top of that, my shoe kept rubbing my foot on top and I stopped twice to retie it. This has never happened before and now I’m questioning what shoes I should wear for the race. The trail was also in rough condition with several trees blocking it, lots of wet leaves, and rocks/sticks that I had to look out for.

I just can’t believe how bad I felt for the last 5 miles of this run and I can’t pinpoint the cause. Am I overdoing it with the fueling and can’t handle it on harder effort runs? Was it something I ate recently? The hard part is there’s no time to really try something different before the race, as all I have left is a 10 mile easy run next weekend.

I’m trying to remember that one bad run does not take away from all the good runs this training cycle. I’m using today to reset and move on so I can make the most of my last 2 weeks of training. It’s not the way I wanted my last big long run to go, but I suppose it was good practice for pushing through even when I felt pretty awful.

Spent almost every step of this 21 mile run questi Spent almost every step of this 21 mile run questioning my life choices. Like waking up at 3am to run 12 miles on the treadmill and 9 outside. This was a crazy week with a kid that wasn’t sleeping great and fighting a cold and super busy days at work. My legs were just tired the whole time today. It was really hard to run outside after so many treadmill miles and my pace was much slower than inside.

I reminded myself that this is peak week. It’s supposed to feel hard. If it was easy everyone would do it. I ran 53 miles this week and am not injured. The weather is perfect. I’ve gotten in every planned run of this training cycle so far.  I get to do this. 

And I managed to finish strong with my last 3 miles the fastest of the (outside) run. I owe that to a solid fueling plan and taking all my gels even when I really didn’t want to.

3 weeks to go until race day!
