Meal Planning and Prep Week of 10/5-10/11

I hope that everyone is having a great Saturday and  maybe by the time you read this your long run will be over! As this posts I will be getting ready to head out for my own. I thought I would just share my meal planning and prep for the the week of 10/5.

Last weeks meals turned out good, but there was nothing too exciting involved. Here’s what the week looked like.

Meal Planning and Prep Week of 10/5-10/11 Menu:

Sunday: Zucchini noodles with meat and mushroom sauce

Monday: Salmon, sweet potatoes, broccoli

Tuesday: Brushetta chicken, spaghetti squash, asparagus

Wednesday: Ate at my parents’ house

Thursday: Pork chops (I just baked them and sprinkled seasoning on both sides), maple roasted butternut squash and Brussels sprouts

Friday: Turkey meatballs, salad, and pasta for Rob/baked potato for me

Saturday: Out to dinner

Breakfasts: Smoothies, eggs, paleo pancakes

Lunches: Salads and leftovers

Snacks:  Chocolate banana bread oat bars, paleo chocolate chunk cookies

Food Prepped This Week

  • cooked bacon
  • cooked plantains
  • cleaned and sliced berries
  • baked chocolate banana oat bars
  • baked cookies
  • roasted spaghetti squash
  • cooked pancakes
  • sautéed broccoli and sweet potatoes for salads
  • spiralized noodles
  • chopped onions
  • minced garlic and Rob grilled chicken for lunches

I’m getting a little tired of eating the same stuff, but it seems to be working for now. I have good system for my prep and don’t really want to switch things up too much!

  • Do you usually eat the same stuff every week or try to change it up?
  • How often do you go out to eat?
  • Do you prep you meals ahead of time?

    I really need to try spaghetti squash since I like zucchini noodles so much! I bet I would like the squash.

    I do usually eat the same things every week…. practically every night! It’s usually some combination of chicken, veggie and some type of noodle or rice OR mushroom ravioli.

      You should definitely try spaghetti squash! I think its a little lighter than the zucchini, but kind of the same (plain) flavor.

    My meals gradually change over time as I get tired of some foods and slowly start replacing them. There are some things – like burgers, meatballs and roasted veggies that are always in the rotation. Glad the long run is done!

      I think I kind of do the same thing…although I think I have been kind of eating the same things for awhile now!

    We eat a lot of the same meals over the course of the month, but I try to change it up week by week. It’s tricky now that my 4yo is becoming really picky because I also want to stick with the healthy meals that I know she’ll eat!

      I would imagine that would limit your options a bit! I try to rotate through some different things week by week also, while also adding in a new recipe every once in a while!

    On weekdays I eat the same thing for breakfast Mon – Fri, smoothie and a handful of almonds and my morning snack has been the same for a month or 2, yogurt, fruit and nuts. I plan 4-5 recipes for dinner and lunch and have each recipe at least twice. It seems to work 🙂

      I’m the same way- my breakfasts and lunches usually look pretty similar and then I try to switch up my dinners as much as possible!

19 miles! 7 on the treadmill, 12 outside, 1,272 to 19 miles! 7 on the treadmill, 12 outside, 1,272 total feet of elevation gain. Amazing weather. Listened to Life of a Showgirl on the treadmill and had some podcasts saved for my outside run but couldn’t get my headphones to connect. This was challenging by the end and I kept thinking how hard it would be if I needed to run another 7 miles today (and all miles at a faster pace) but this is why we train. Feeling like I’m in a good place with 6 weeks to go! How was your run today? #run #marathontraining #longrun
