WIAW: Back to Paleo

I think its definitely time to switch gears from all the stress/running posts and talk about food today. Since it’s WIAW and I said the other day that I was going to go back to eating “mostly paleo” I thought I would share what some of my food looked like so far this week. I don’t think I captured everything, and these were over the course of Sunday night through Tuesday night.

Breakfasts were pretty much the what I always eat: bananas before I run, a smoothie after a hard run, and some sort of eggs.

I branched out this week and made a different kind of egg frittata. I followed this recipe which ended up really good except I’m not really feeling the garlic in the morning.

Snacks are usually eaten both in the morning and the afternoon. I’ve been having apples/pears, trail mix (cashews, almonds, raisins) and my usual LARABARs.

Any recommendations for a different kind of LARABAR we can try? We order them on amazon so we would have to get a box of 12, so we are nervous to order anything new without knowing if they are good.

On Sunday I made pulled pork using Michele’s recipe. I’ve never made pulled pork before so I was nervous but it was really easy and came out great!

We had plenty of leftovers so so I used it in a salad on Tuesday along with leftover roasted broccoli.

I’ve been all about the crock pot this week. On Tuesday I made this beef stew. It was so nice to come home from work and have dinner ready. However, I feel like the meat was overcooked and the veggies were undercooked.

We have lots of leftovers from this meal too! Makes lunch planning easier.

I was also really pleased with how my salmon came out on Monday night. It can be really tricky to cook it the right amount but I think I got it just right. I always need to adapt the time based on thickness.

I coated it with olive oil and sprinkled it with salt, pepper, and Mrs. Dash seasoning.

I’ve also been having some dark chocolate (and wine on Tuesday) after dinner.

    I eat leftovers with breakfast and lunch if I have them. Glad you liked the pork. It really is an easy one and not much can go wrong! I’ve always had trouble making a good beef stew in the slow cooker. For me everything winds up tasting overcooked somehow.

      After I made the stew I remembered that I had the same problem last winter and that’s why I stopped making it. I’m thinking I just need to cook it for less time, but that’s tricky when I’m out of the house all day.

      I didn’t own one either until Rob and I moved in together and he had one that his mom had given him at some point. Its nice to have but I probably wouldn’t have bought one on my own!

    I love my crockpot! We’ve used it to make pulled pork and meatloaf mostly, but I want to try some stews now that it’s getting colder.

    I definitely need to utilize my crockpot more. As in, it is still untouched and sitting on a shelf!

      I’m actually really surprised that you don’t use a crock pot! I don’t know why but I feel like you would come up with really awesome recipes using one! (Perhaps that’s a challenge…?)

    Everything looks good! We’ve been moving toward less grains as well, especially since it’s all my 4 yo would eat if she could. 🙂 And mmm, gotta have room for dark chocolate!

      Ive definitely gotten away from them when I initially started following paleo. I’ll eat certain things occasionally but I have found that by not eating grains it forces me to eat more whole foods- especially veggies!

    Totally LOVE the crockpot, and my rule is to always make a big dinner so you have leftovers!!

    Usually I use them for lunch, but I also loooove having dinner for breakfast. Just more filling, and a nice change! Not many other countries have specific breakfast foods–usually it’s the same as dinner. Thought that was interesting when I visited a few places!

      Yes to leftovers! And that’s actually a great idea and makes so much sense. Sometimes I feel so limited by the standard breakfasts foods…who says its wrong to eat dinner in the morning? Sounds good to me!

    I love leftovers and all of your look soooo good!! I’m not much of a crockpot cook-but my husband loves To cook in it! I know
    It’s so easy to do but i guess I’m just lazy in doing. Research for a meal!

      I love using it but I am still finding meals that I really like! The beef stew was ok but I would definitely tweak it if I made it again. I’m making chili tonight so hopefully that comes out good!

    I had the same problem with my beef stew this week! I highly recommend making your own lara bars. Blend figs into a paste and then mix in coconut butter (my favorite is the lemon from My Coconut Kitchen) then add whatever type of trail mix in. I just used chia seeds, sunflower seeds, almonds, walnuts and coconut flakes. Put in the fridge until hard and the cut up into squares and wrap in plastic wrap. Delicious, cheap and you can alternate with your own flavors.!

    My trick for beef stew in the slow cooker…I use sirloin tips vs. stew meat, and I only have the slow cooker going for 4-5 hours…

      That sounds great! Do you put the veggies in for longer? I used potatoes, parsnips, and carrots and I would have liked them a little softer. Maybe I could put those in first and then add the meat later?

    I love using my crock pot this time of year! This weekend I think I’m going to make a big batch of chili (I found this awesome recipe that uses a little bit of cocoa powder a few weeks ago and wowed all of my friends with it) for work lunches next week.

    I’ve been contemplating on eating pale for a month to see how it goes, but just haven’t done it yet. Have you noticed a huge change in how you’ve been feeling? Energy level wise?

      I gradually transitioned over the summer and at first I actually felt like I had less energy when I was running. (It was also really hot out at that time, so that could have been a factor) but after about 4-6 weeks I started to feel great. I loved learning about it and now I just follow most of the concepts but adjust it in a way that works for me. I always feel much better after I eat a meal now than I used to! I lived off turkey sandwiches and flavored yogurt for lunch and always felt awful after!

    Looks tasty. I have tried the coconut creme Lara bars and I like them but like you I got thrm 12 in a box and I am kind of getting sick of that flavor. I knew sweet potatoes are paleo but I didn’t think reg potatoes werr? I am sure wine isn’t, but a little wine never hurt anyone:)

      I believe that initially Whole30 did not allow white potatoes but I think they recently decided they are ok. I don’t follow it strictly, I just focus on eating whole/natural foods and avoiding sugar. Wine definitely isn’t accepted for Whole30 but I’ve heard its the closest alcohol to being accepted as paleo. So technically no but a little is ok…and I’m not giving up my wine anytime soon anyway:)

    Love crockpot meals! I cooked a pork roast in there and it’s lasting us all week! Coconut larabars are by far the best!!!

    That always happens to me when I attempt a stew – how do the pros manage to get the meat/veggie done-ness just right?? Ahh Lindt and red wine – possibly my two favourite mid-week desserts. Might have to make that happen tonight…

    I lovvvvve my crockpot in the colder months. It’s easy and the food that comes out of it is almost always really comforting. Pulled pork is the best! I haven’t had it in forever and now I want it! Also, I’m the same way about branching out in the food area – you don’t want to spend tons of money just to “try” something. Good to know that the Cashew ones are good though! Sorry I’m not more help 🙂

      I used to eat the peanut butter chocolate chip ones all the time (they’re so good!) and then we got a little tired of them and decided to switch it up. I do want to try the peanut butter cookie though!

    My lunches are pretty boring, usually a turkey wrap or sandwich or peanut butter and jelly. I’m just not big on lunches for some reason. Breakfast and dinner on the other hand, I definitely look forward to 🙂 LARABARS are so good, love the real and simple ingredients, which can be hard to find in bars. Cashew Cookie is also a fav of mine along with Blueberry Muffin. I’m hoping to find the Snickerdoodle one in stores, sounds yummy!

      I never really like lunch either! Unless its leftovers that are really good. My usual salads don’t excite me at all. I’ve been thinking about trying blueberry muffin, and snickerdoodle sounds amazing, I didn’t even know they made that flavor!

    I looooove crockpot meals! They are so easy to make and delicious but I rarely ever pull the crockpot out. I don’t know why!

    I love having a small piece of chocolate with a cup of hot tea (almost) every night after dinner!

    The salmon, potato, and asparagus is pretty much my perfect meal right there. Thank you so much for posting that recipe too! We just got a new crockpot (FINALLY) and with winter coming up so fast (WTF) beef stew sounds amazing.

    I’m all about leftovers and my slow cooker! My weekday lunches always consist of leftover meat and sometimes leftover roasted vegetables – this week’s was Nom Nom Paleo slow cooker Kalua Pig, and cauliflower, broccoli and carrots roasted in coconut oil.

    I also enjoy vegetables for my breakfast 🙂

      I’ve been finding that leftovers make lunches much easier to plan! Its also nice to use the slow cooker to make a big meal that will guarantee leftovers!

This is my first big marathon in 10 years, my first time traveling to a race in 10 years, and my first time spending the night away from my kids. And of course I’m tapering so I can’t run off the nerves 🙃 #marathontraining #taper #richmondmarathon
Looked like fall, felt like summer 🍁 I was definit Looked like fall, felt like summer 🍁 I was definitely overdressed for this run but it was nice to not wear gloves or a headband! This was the run I needed a week before my marathon. After last week’s disaster of a long run it felt great to just run an easy 10 miles. (And these days 10 miles feels like nothing). I think I figured out the fueling and shoes 🤞so nothing left to do but take it easy, carb load, and get in the right mindset! Is it unseasonably warm where you are?

Yesterday’s long run was not what I wanted it to b Yesterday’s long run was not what I wanted it to be. The plan was to take the day off from work, head to the trail where I could run 10 uninterrupted miles at MP (16 total) and practice my race day fueling while wearing my race day shoes.

What actually happened? All week I was stressed about this run and the condition of the trail. We had lots of rain on Thursday, and Friday was forecasted to be very windy. I tried to get in the best mindset possible, reminding myself that I won’t be able to control the conditions on race day. Meanwhile, I haven’t been sleeping well thanks to my 2 year old waking up every night, and my watch has been basically telling me that I’m losing all my fitness and need a week of recovery.

While I started the run feeling pretty good, after 11 miles (7 at MP) my stomach turned and I almost got sick on the side of the trail. I just couldn’t recover from that. The best I could do was run the rest of the miles easy, and needed some walk breaks. On top of that, my shoe kept rubbing my foot on top and I stopped twice to retie it. This has never happened before and now I’m questioning what shoes I should wear for the race. The trail was also in rough condition with several trees blocking it, lots of wet leaves, and rocks/sticks that I had to look out for.

I just can’t believe how bad I felt for the last 5 miles of this run and I can’t pinpoint the cause. Am I overdoing it with the fueling and can’t handle it on harder effort runs? Was it something I ate recently? The hard part is there’s no time to really try something different before the race, as all I have left is a 10 mile easy run next weekend.

I’m trying to remember that one bad run does not take away from all the good runs this training cycle. I’m using today to reset and move on so I can make the most of my last 2 weeks of training. It’s not the way I wanted my last big long run to go, but I suppose it was good practice for pushing through even when I felt pretty awful.

Spent almost every step of this 21 mile run questi Spent almost every step of this 21 mile run questioning my life choices. Like waking up at 3am to run 12 miles on the treadmill and 9 outside. This was a crazy week with a kid that wasn’t sleeping great and fighting a cold and super busy days at work. My legs were just tired the whole time today. It was really hard to run outside after so many treadmill miles and my pace was much slower than inside.

I reminded myself that this is peak week. It’s supposed to feel hard. If it was easy everyone would do it. I ran 53 miles this week and am not injured. The weather is perfect. I’ve gotten in every planned run of this training cycle so far.  I get to do this. 

And I managed to finish strong with my last 3 miles the fastest of the (outside) run. I owe that to a solid fueling plan and taking all my gels even when I really didn’t want to.

3 weeks to go until race day!
