Meal Planning Week of 9/7-9/13

I wanted to get this post up on Sunday and since I won’t have time to actually do my meal prep until later, I’m just going to share my meal planning rather than what I actually did.

Meal Plan Week of 9/7-9/13:

Sunday 9/7: Salmon, baked potatoes, asparagus (can you tell salmon is our typical Sunday meal? It’s so easy plus we hate to eat fish too many days after its purchased- its best that first day!)

Monday 9/8: Chicken coated in almond flour fried in ghee, roasted red potatoes, spinach

Tuesday 9/9: Burgers, sweet potato fries, broccoli and cauliflower

Wednesday 9/10: Back to school night for me- Rob’s on his own:)

Thursday 9/11: Steak, butternut squash, zucchini

Friday 9/12: Pasta, turkey meatballs, salad

Saturday 9/13: Spaghetti squash/ground turkey/broccoli bake

Breakfasts: smoothies, eggs with bacon and veggies (hoping to try more variety this week!)

Lunches: salads with steak or chicken, leftovers

Snacks: Some sort of paleo muffins, fruit, paleo chocolate chips cookies

As you can see I didn’t use any recipes besides the cookies. I didn’t want to worry about following directions and decided to be a little more creative on my own this week. We’ll see how that goes!

Here’s the prepping plan:

  • cut, rinse, store fruit
  • cut and store chicken
  • cut up veggies (broccoli, cauliflower, whatever I’m using in eggs)
  • make a marinade for the steak
  • cube butternut squash (unless we buy the kind that is pre-cut)
  • cook steak and chicken for lunches
  • bake muffins and cookies
  • cook meatballs (and freeze)

I’m not gonna worry about roasting the spaghetti squash since I’ll have time to do that on Saturday.

    I’ve been feeling un creative with meals lately and I think I need to do some brainstorming and meal planning to get on track. I think I have to focus on doing little things differently instead of coming up with entirely new meals. Having to pack 3 lunches now is throwing me off and I’m all over the place with groceries and meals 🙂

      I think one of my problems is I forget about some of the good stuff I’ve made before! I need to try to think back on some of the stuff that has been good to come up with things to make again. The lunch thing sounds tricky, too! I have a hard enough time make sure I have my own lunch prepared:)

    I was pretty good about meal planning this week. I had kind of fallen off the bandwagon for a while. Chicken thighs with a lemon pepper seasoning and asparagus and then steak with Spanish rice are the highlights of this week’s dinners.

    Salmon is one of my favourites too! Easy to prepare, healthy but really tasty! As an admittedly lazy university student, I don’t prep my meals, I normally just scan the ingredients on a sandwich so I at least feel a little bit proactive and then call it a day! It’s something I need to work on!

      I don’t know if it would have been possible for me to do meal planning an prep when I was in school either! At least you are conscientious about your eating- its definitely better than nothing!

    I am making that pork chop recipe you posted a couple of weeks ago tonight. I hope I do it justice. If it is a success, I will post it on instagram! Fingers crossed that my picky boyfriend likes it! I am substituting red potatoes for him, while I eat sweet potatoes, instead of the parsnips.

    I’ve been slacking on my meal planning and prepping but had some time to get food prepped yesterday. It was great! Now I’m ready for a busy week! Tonight we are having slow roasted Balsamic Roast Grass-fed beef with sweet potatoes and carrots. Yum!

    Looks like a good week food wise. I can’t wait until the stores up here get some spaghetti squash – I haven’t seen any yet! Have you ever tried making zucchini spaghetti? It’s delicious, especially with turkey meatballs 🙂
    I wish I could be as organized as you with meal planning. I hardly had time to get to the store today, and then they didn’t even have the lettuce I always buy. This week is a “eat whatever you get your hands on” week for me!

      You know our regular grocery store was out of spaghetti squash this weekend. There is another one close by so we ran in there and picked one up. I did try zucchini spaghetti once!I finally got a spiralizer. I definitely need to make it again!

    Your meals sound great! I’m constantly struggling to get enough diversity into my breakfasts- usually I stick with smoothies and/or hard boiled eggs and then go for a bigger lunch. I’m going to have to checkout the paleo chocolate chip cookies recipe! Cookies are my biggest sweets craving so a paleo alternative would be really nice :)))

      The cookies are really good- and my husband who is picky about desserts loves them!
      I used to do smoothies everyday for breakfast but now I’e been doing more eggs. (Sometimes both depending on my workout that day!)

Yesterday’s’ long run was 16 miles with 6 x 1 Yesterday’s’ long run was 16 miles with 6 x 1 mile MP/1 mile easy. I took a few hours of PTO in the morning to do this on the trail because I knew wouldn’t be able to do it this weekend. This was my first time on the trail since my marathon last November. It was nice to be back there and the perfect place to do this kind of long run. It was the kind of run where you start thinking “ok cool I just did a tough MP workout” but then you remember you actually need to run 26 miles in a row at that pace. Luckily there’s still 9 more weeks of training…although that doesn’t really sound like that much!
41 miles for the week and got in 2 strength sessions. Taking it easy this weekend other than chasing the kids around for all their activities! #run #marathontraining #longrun
It’s kind of freeing to not care about pace. It It’s kind of freeing to not care about pace. It is a little frustrating to have to plan more time for an easy run. But it’s definitely worth it to recover quicker and feel better on workout days! #run #marathongtraining #easyrun
You know marathon training is starting to get real You know marathon training is starting to get real when you start losing track of what training week it is. I had to check my calendar but this was week 6, so 10 weeks to go! 

I ran the Charles Street 12 last weekend so this week was all about easy miles and recovering from the race. That went well until I went and ran all the hills yesterday followed by walking around a maze and fun park for 5 hours. I got in some strength and mobility this morning and now I’m back to focusing on recovery!

15 miles, over 1,100 feet of elevation gain, and 9 15 miles, over 1,100 feet of elevation gain, and 91% humidity 🫠 Pretty sure that was harder than my race last weekend, but got it done. Now off to my second workout of the day- taking the kids to an outdoor fun park. RIP to my legs.
