Meal Planning And Prep: Whole30 Week 2

Another week of the Whole30 is complete! As I said on Wednesday, I am starting to get the hang of this more and more each day. So, here’s what I planned and prepped for last week.

Sunday: Slow-cooker chicken, sweet potato and kale stew

Monday: Baked salmon with roasted red potatoes and broccoli

Tuesday: Pizza spaghetti pie with spinach

Wednesday: Mustard balsamic baked chicken, baked potatoes, asparagus

Thursday: Turkey burgers with balsamic chutney, sweet potato fries, green beans

Friday: Paleo meatballs with zucchini noodles, salad

Saturday: Chicken with butternut squash and sautéed spinach and kale

Breakfasts: Paleo chicken sweet potato frittata, eggs with veggies

Lunches: Leftovers from Sunday, Tuesday, and Wednesday; salad with grilled chicken (with homemade rub) and veggies

Snacks/Other: apple chips baked in coconut oil and cinnamon, fruit

Here is what I prepped last weekend:

-sliced peppers

-roasted spaghetti squash

-made frittata

-cooked ground turkey

-roasted broccoli and sweet potatoes

-cooked meatballs (to freeze)

-washed and stored berries

-cut up broccoli

-cooked butternut squash

-sliced cucumber

-made paleo ketchup

I also ended up baking the apple chips later on Sunday, and Rob grilled chicken on our indoor grill as he always does. I took the above picture before the apples or chicken was done!

    I think as whole30 goes on you start to realize what meals/food you like enough to keep repeating, and which were fine as a test but not worth it again. Looks like you’re sticking to basic and relatively easy to prep meals which definitely helps.

      Very true- Since I am about 2 weeks in I am thinking about repeating some things, but I also want to keep trying as much new stuff as possible. So far I don’t think we have had any failed meals so I am happy about that! There were definitely some winners too that we will go back to even after the Whole30 is over!

    Looks like you’re doing a great job! I’m sure it’s a lot of planning to figure out the right meals every week and keep it interesting. I’ve been wanting to try roasting a chicken in the crockpot – it’s such a great idea!

      I think the hardest part is the prep work and the realizing that I still had more to do throughout the week for certain meals! We have also been running out of food quicker because we are eating at home all the time!

    Do you find that picking mea;s for particular days makes your meal planning better? When I prep I don’t usually do that, but I wonder if it makes it more efficient. The apple chips sound delicious!

      It helps to me to know what meat I need to freeze and which I can leave in the fridge. I also plan for easier meals on days when I know I will be home later. I also like to spread out similar meals, so if we are eating sweet potatoes more than once I try not to do it back to back. Otherwise I don’t think it matters much!

        Oh that makes a lot of sense. I would imagine that approach is helpful. I am not a fan of repeating back to back meals either! 🙂

    Your meals look so delicious! I’m glad you provided links, I might have to try some of the recipes (Paleo crockpot meatballs sound so good, especially on top of spaghetti squash!). Hope you have a wonderful weekend!

    I just bought the It Starts with Food book! I am excited to start it and maybe will try Whole30. Your meal prep posts will be very helpful 🙂

      That would be great! Reading the book is definitely important. I wish I had read it more recently but I have been using the whole30 website as a great source when I have questions. And there are so many great blogs with whole30 recipes and tips as well! It definitely makes it a little easier.

    Looks like a great plan for the week ahead! I’m planning to make apple jalapeño turkey burgers, a meatloaf, and salmon cakes (basically Nom Nom Paleo’s tuna cakes), along with leftover flank steak and other odds and ends. Feels good to have a plan in motion for Whole30.

      Your meals sound really good! I always forget about meatloaf for some reason but its so good and I love having leftovers! Enjoy your week!

    That egg frittata looks delicious. Heading to check out the recipe now. I’m wondering if I’ll be able to sub it w/ white potatoes since my husband isn’t a sweet potato fan… crazy guy!

      I think white potatoes would work well as long as you can get them soft enough! Maybe just cut them smaller so they cook faster? I hope they turn out well if you give them a try!
      But seriously, he doesn’t like sweet potatoes?!!?

      It’s so true! If I don’t prep my week of food gets really boring. Its great to have a plan and be ready for a busy week!

    I am TRYING to branch out a tiny bit from my standard 3 meals this week, haha.

    I bought pre-diced butternut squash that I’m going to bake along with some diced sweet potato and see how that goes! Exciting times in my house, haha.

    All of your food looks delicious!! We are actually in the middle of food prep right now and I have lots of veggies prepped, I feel like if I don’t have veggies on hand I am more likely to eat the not so healthy stuff!!

      I think the meal planning/prepping is kind of addicting! Now when I don’t do it I really regret it. During the whole30 I do more than usual but it definitely helps with staying on track!

      Thanks! Some weeks it can feel like a real burden but then I just do less. Usually it takes about 2 hours.

    Pizza spaghetti pie? I will definitely be making that soon, but adding in some cheese! It would be super easy to make and store for meals when school starts again.
    Do you think you’ll keep doing Whole30 after the month is over?

      Probably not! But I will definitely continue to use it as a guideline for how I eat. But I don’t like feeling like I’m not “allowed” to eat certain things when I want to. And I need peanut butter and wine back in my life:)

      To be honest I feel like I learned a lot more when I initially started trying to eat paleo last year. But as I have been more “strict” with whole30 I am much more aware of EVERYTHING in my food and its opened my eyes to everything that has added sugars or oils! I think I will also notice what foods don’t make me feel as good when I start added things back in once its over.

This is my first big marathon in 10 years, my first time traveling to a race in 10 years, and my first time spending the night away from my kids. And of course I’m tapering so I can’t run off the nerves 🙃 #marathontraining #taper #richmondmarathon
Looked like fall, felt like summer 🍁 I was definit Looked like fall, felt like summer 🍁 I was definitely overdressed for this run but it was nice to not wear gloves or a headband! This was the run I needed a week before my marathon. After last week’s disaster of a long run it felt great to just run an easy 10 miles. (And these days 10 miles feels like nothing). I think I figured out the fueling and shoes 🤞so nothing left to do but take it easy, carb load, and get in the right mindset! Is it unseasonably warm where you are?

Yesterday’s long run was not what I wanted it to b Yesterday’s long run was not what I wanted it to be. The plan was to take the day off from work, head to the trail where I could run 10 uninterrupted miles at MP (16 total) and practice my race day fueling while wearing my race day shoes.

What actually happened? All week I was stressed about this run and the condition of the trail. We had lots of rain on Thursday, and Friday was forecasted to be very windy. I tried to get in the best mindset possible, reminding myself that I won’t be able to control the conditions on race day. Meanwhile, I haven’t been sleeping well thanks to my 2 year old waking up every night, and my watch has been basically telling me that I’m losing all my fitness and need a week of recovery.

While I started the run feeling pretty good, after 11 miles (7 at MP) my stomach turned and I almost got sick on the side of the trail. I just couldn’t recover from that. The best I could do was run the rest of the miles easy, and needed some walk breaks. On top of that, my shoe kept rubbing my foot on top and I stopped twice to retie it. This has never happened before and now I’m questioning what shoes I should wear for the race. The trail was also in rough condition with several trees blocking it, lots of wet leaves, and rocks/sticks that I had to look out for.

I just can’t believe how bad I felt for the last 5 miles of this run and I can’t pinpoint the cause. Am I overdoing it with the fueling and can’t handle it on harder effort runs? Was it something I ate recently? The hard part is there’s no time to really try something different before the race, as all I have left is a 10 mile easy run next weekend.

I’m trying to remember that one bad run does not take away from all the good runs this training cycle. I’m using today to reset and move on so I can make the most of my last 2 weeks of training. It’s not the way I wanted my last big long run to go, but I suppose it was good practice for pushing through even when I felt pretty awful.

Spent almost every step of this 21 mile run questi Spent almost every step of this 21 mile run questioning my life choices. Like waking up at 3am to run 12 miles on the treadmill and 9 outside. This was a crazy week with a kid that wasn’t sleeping great and fighting a cold and super busy days at work. My legs were just tired the whole time today. It was really hard to run outside after so many treadmill miles and my pace was much slower than inside.

I reminded myself that this is peak week. It’s supposed to feel hard. If it was easy everyone would do it. I ran 53 miles this week and am not injured. The weather is perfect. I’ve gotten in every planned run of this training cycle so far.  I get to do this. 

And I managed to finish strong with my last 3 miles the fastest of the (outside) run. I owe that to a solid fueling plan and taking all my gels even when I really didn’t want to.

3 weeks to go until race day!
