Back To Normal (WIAW)

Now that snow days are ancient history (hopefully!) I feel like I am back to a regular schedule. Which means my typical food, for the most part. The one nice thing about being home more last week was being able to be more spontaneous about my food choices! (But really, most of the time I ate the same things as usual anyway.) This week I am back to being busy so I’m relying on my food prep and leftovers! 

breakfastOn Monday morning  I got up at 5 and did my PT stuff. I showered and wanted to eat something, but it was only 6am and I knew that I couldn’t eat my real breakfast that early. So I had a banana and a piece of Michele’s paleo blueberry cinnamon breakfast cake! Then around 7:30 I made eggs with spinach, bacon, and plantains. 

lunchLunch was a salad (I swear there’s spring mix under there!) with roasted sweet potatoes and broccoli with steak, drizzled with a little olive oil. Baby carrots and almond butter on the side. 

dinner

I wasn’t feeling very “snacky” today (is that a word? you know what I mean) but I grabbed one on Meredith’s fudge brownie bites before PT but couldn’t get a good picture. Dinner was leftovers that my parents sent home with us from the weekend! Roast beef, mashed potatoes, butternut squash, asparagus. Not my typically Monday night dinner but it was nice to not have to cook!

dessert

After dinner I had a brownie (something else sent home from my parents’ over the weekend). I also drank alot of Nuun….it was SO hot running on the Alter-G in PT and I was really thirsty for the rest of the night!

    The blueberry cake is also in my post today 🙂 my food choices do change based on when I’m running. I also use leftovers in meals and snacks if I have them.

      I love to take advantage of leftovers for snacks! We saved some sweet potato fries from last night and they will be perfect for this afternoon!

    That salad with broccoli and steak looks amazing!! I eat a lot of leftovers, primarily from the restautant I work at but also from when I cook up a big pot of something usually on Sunday’s. And my schedule is pretty random depending on work and study so I just go with the flow! 🙂

    I have to say that I was really happy to begin 5 day work weeks again-sitting around the house for all that time gets really boring and only
    Made me hungry when I normally wouldn’t be!

    I rarely have leftovers but it’s always nice when I do! I am glad you made the brownie bites! How did they come out? I have made them three times in only one week! I just love them.

    My meals definitely change with the seasons! So I can’t wait for spring to incorporate more salads. As for leftovers, I feel like I’m always eating them! I really don’t mind since it makes the day easier especially if it’s a meal I love!

    It’s funny because as a kid I haaaated leftovers and now they’re the best thing ever! And when I run on the treadmill I sweat like CRAZY and have to drink water all day long. I don’t sweat as much when I run outside.

      I didn’t like them as a kid either! Maybe we appreciate them more now because we realize how much of a pain it is to cook:)

    If I am off my regular schedule, I am way more likely to eat differently. One thing I notice is I do not drink nearly enough water when I am not at work or on the weekends. It’s weird, since it is more readily available, I think it is just because I get wrapped up in doing a million other things!

    My favorite way to hydrate after a workout is with glutamine and GAT Martini Muscle Berry Blast Amino Acids. They taste like candy!

    My food choices definitely change as my schedule gets more or less hectic. The busier I am the easier it is to say, “let’s go out for dinner.” I did that a few too many times in February and definitely felt it come March – I was feeling bloated all the time. I hate that feeling!

      I don’t like how I feel when I eat out all the time either! That’s why I prefer to cook whenever possible.

    But yes we do eat a lot more leftovers now because in the spirit of trying to save money we are cooking more at home and freezing it. (And it’s working!) This all looks yummy to me!
    Oh and would you believe that I had a nightmare last night that more snow was coming? That’s the kind of thing I nightmare about now haha.

    My breakfast and lunch are normally the same but I change things up with dinner. Tonight will be leftover chicken tacos that I made on Sunday.

    Yes, yes the snow IS behind us. I won’t have it any other way!

    Looks like a great week of eats so far. I love leftovers, especially soup, which I always make a ton of so that it will last for a few days.

    I love leftovers! We usually roast a chicken early in the week and then make a big pot of soup from it, so we have quite a few leftovers from those. Leftovers make the best lunches.
    Nuun is my favorite way to hydrate after a hard workout! And a cup of coffee 🙂

    My food choices definitely change based on my schedule. If I’m busier I tend to eat meals that are quick or I eat out or I just forget to eat all together. Nuun is definitely my favorite way to rehydrate after a run!

    Yum! It all looks delicious to me. I eat lots of leftovers for lunch. Caveman doesn’t really care for them for dinner, unless there’s leftover chili. I made a sweet potato hash the other day that was awesome.

    Hi Lisa! Yummy eats! I eat pretty similar stuff most days of the week, but my weekend meals depend on the activities and are usually much more fun. And although I like leftovers, I don’t ever cook enough to have them. I wish I lived close enough to my parents to bring back my Mom’s cooking! Happy What I Ate Wednesday to you! 🙂

      My weekend meals are usually much different than during the week as well! It’s always a nice treat to be able to take home leftovers from my parents’:)

    My food choices definitely vary based off of how my schedule looks. On workdays, my breakfasts are almost always grab and go (piece of fruit, yogurt, nuts, ets) and when I’m at home I usually have eggs. I am a huge lover of leftovers, and I purposely prepare enough food to have several meals worth of them.

      Now that I have realized how great it is to utilize leftovers I try to make extras too. It’s like cooking for multiple meals at once!

    Yummy! I always try to make a little extra for leftovers especially if I know that I’m going to be home late. The crockpot is especially awesome for this.

    Great eats! My food choices do change depending on my schedule…The busier I get and if I’m in some crazy cleaning frenzy I tend to eat horribly if at all. I try and eat most of my leftovers, but they get old after a while!

      It’s so easy to forget to eat when you’re really busy! On days when I have a regular routine my hunger seems to strike right on schedule, so I usually don’t have that problem:)

    I have to admit, it took me awhile to get used to leftovers. When I was single, I almost never cooked because I hated eating the same meal over 2-3 times, and freezing stuff just wasn’t my thing. I’m much better now, although I do choose what I’m going to make based on its attractiveness the second time around. 🙂

      I know what you mean- some foods just aren’t as good as leftovers! I’ve been trying to figure out which ones work and which one’s don’t:)

    Carrots and almond butter what an odd combination. But I can’t knock it til I try it I suppose. That brownie looks delicious. More so than the roast beef. Never been a fan for that particular meal.

      I used to always eat carrots with PB, so I figured why not try almond butter!

    I rely heavily on leftovers. There is usually at least one night where we are all eating something different (leftover from different nights). It helps on those nights when I just don’t feel like cooking (that’s what microwaves are for). That roast beef looks gooooood. That’s something I like to make in the crockpot.

    The Mr. and I love leftovers. I can’t imagine not eating them or having them in my refrigerator 🙂 I’m Nuun obsessed as well. I keep it at home and at my desk at work.

    I hope for everyone’s sake that this winter is kaput! I will be heartbroken if we go back to winter temps after the beautiful week we’ve had.
    I eat leftovers A LOT so it’s good that I like them! But it becomes a problem when I make extra food for leftovers, but end up eating it that night…whoops!
    #nuunlove for life!

Yesterday’s’ long run was 16 miles with 6 x 1 Yesterday’s’ long run was 16 miles with 6 x 1 mile MP/1 mile easy. I took a few hours of PTO in the morning to do this on the trail because I knew wouldn’t be able to do it this weekend. This was my first time on the trail since my marathon last November. It was nice to be back there and the perfect place to do this kind of long run. It was the kind of run where you start thinking “ok cool I just did a tough MP workout” but then you remember you actually need to run 26 miles in a row at that pace. Luckily there’s still 9 more weeks of training…although that doesn’t really sound like that much!
41 miles for the week and got in 2 strength sessions. Taking it easy this weekend other than chasing the kids around for all their activities! #run #marathontraining #longrun
It’s kind of freeing to not care about pace. It It’s kind of freeing to not care about pace. It is a little frustrating to have to plan more time for an easy run. But it’s definitely worth it to recover quicker and feel better on workout days! #run #marathongtraining #easyrun
You know marathon training is starting to get real You know marathon training is starting to get real when you start losing track of what training week it is. I had to check my calendar but this was week 6, so 10 weeks to go! 

I ran the Charles Street 12 last weekend so this week was all about easy miles and recovering from the race. That went well until I went and ran all the hills yesterday followed by walking around a maze and fun park for 5 hours. I got in some strength and mobility this morning and now I’m back to focusing on recovery!

15 miles, over 1,100 feet of elevation gain, and 9 15 miles, over 1,100 feet of elevation gain, and 91% humidity 🫠 Pretty sure that was harder than my race last weekend, but got it done. Now off to my second workout of the day- taking the kids to an outdoor fun park. RIP to my legs.
