I’m here to share another week of meal planning and prep…although I’m not really “here”- as this post is going up I will be getting ready to run the Baltimore half! But hopefully you will get to take a look if you need any ideas for your own meal planning this week!
Sunday: Flat iron steak (marinated like this), with sweet potatoes and broccoli
Monday: Salmon, baked potatoes, asparagus
Tuesday: Taco salad
Wednesday: Turkey burgers, sweet potato fries, green beans
Thursday: Chicken coated in egg/almond flour and fried in coconut oil, with roasted red potatoes, broccoli, cauliflower, and carrots
Friday: Turkey meatballs, pasta for Rob, sweet potato for me, and salad
Saturday: Out! We have a gift certificate to Flemings that we decided to use, hopefully to celebrate a good race day:)
Breakfasts: eggs with bacon, plantains, peppers, onions, tomatoes and smoothies
Lunches: Salads with steak, chicken, peppers, carrots, cucumber, tomatoes
-washing and storing berries
-making meatballs (separated for 2 weeks worth to freeze)
-washed and stored romaine for taco salad
-chopped veggies for salads and eggs
-Rob grilled chicken
-cut up sweet potatoes and coated with olive oil and rosemary (we used these the same night I prepped them)
-cooked some bacon to use with eggs
I have to say that I think the steak was my favorite meal of the week, even though it can be a bit of a process to cook (it’s so hard to tell when they are done, especially when they are uneven!) and it always makes a mess in the kitchen. But well worth it in my opinion!
