I tried to keep this week’s meal plan as simple as possible and involving little to no prep. I could have done more, but with getting back from vacation I just didn’t have the energy. Here’s what’s on the menu for this week:
Sunday: Salmon, broccoli, roasted red potatoes
Monday: Pork chops (not sure how I’m making them yet), roasted butternut squash, asparagus
Tuesday: Spaghetti squash with ground turkey, tomato sauce, and spinach
Wednesday: Blackened chicken, cucumber and tomato salad<—(I leave out the sugar), baked potatoes
Thursday: Burgers, sweet potato fries, cauliflower/broccoli/carrot mix
Friday: Pasta, meatballs (made last week and frozen), salad
Saturday: Out (in NY for a bachelorette party!)
Breakfasts/lunches/snacks: Eggs with veggies and bacon, smoothies, salads with steak, black bean brownies (froze some that I made last week), fruit
Food Prep:
Roasted the spaghetti squash, cooked steak for lunches, cut up chicken, washed fruit for the week
I don’t think any of the meals will take too long to put together during the week, so I’m okay with the minimal prep this week. But I’m hoping we have leftovers that I can bring for lunch, because I don’t think that steak will last me more than a couple days!

Your planning is so organized and takes all the guess work out of dinners. My week will probably be similar to yours food wise, but of course nothing has been decided yet! There is always some sort of meatballs, burgers, spaghetti squash or veggie noodle “pasta” dish and probably a chicken dish and pork chops or steak too. I kind of want to experiment with some sort of paleo sesame noodles but we’ll see!
I ended up ordering a small spiralizer (there was one that was really on sale on amazon) so I’m excited to give it a try!
Love simple meal weeks! I had one last week since I was gone Wednesday through today but this week will be back to normal. I’m not a huge pork fan but I do have a yummy recipe on my page for pork chops with an apple bacon sauce. We LOVE them that way!
Ohh apple bacon sauce sounds delicious on pork! I will have to try that out!
