Meal Planning and Prep: The End of the Whole30

I’m just popping in as usual on Saturday morning to share my meal planning and prep from the past week! Our Whole30 ended on Tuesday, so of course for Rob that meant buying chocolate chip cookies on Sunday in preparation for the big day when he could eat sugar again. I’ll admit that I bought a bar of dark chocolate as my “indulgence” this week. I didn’t want to bake last weekend and then not be able to eat it while it was fresh!

 So here was our meal plan for last week:

Sunday: Paleo Turkey Chili

Monday: Salmon, baked potatoes, broccoli/cauliflower/carrot mix

Tuesday: Rosemary Chicken with Zucchini

Wednesday: Burgers, sweet potato fries, green beans

Thursday: Paleo meatballs with spaghetti squash and spinach

Friday: Out

Saturday: Celebrating Rob’s sister’s baby shower!

Breakfasts: Egg, bacon, and veggie frittata

Lunches: Leftovers, salads with grilled chicken or steak, roasted veggies 

Other: plantain chips, fruit, baby carrots, almond butter. Oh and chocolate chip cookies and dark chocolate:)

Here is what I prepped last weekend:

-cooked 2 batches of meatballs to freeze

-roasted spaghetti squash (also froze it since it was for later in the week)

-cooked steak for salads

-Rob grilled chicken on indoor grill

-washed and slices cucumber and pepper

-washed and store berries

-roasted sweet potatoes, butternut squash, zucchini and broccoli

-made plantain chips

-baked frittata

-baked 2 potatoes

I did most of the prep last Saturday but saved a few things for Sunday which was less overwhelming. Isn’t it kind funny how our meal plan pretty much looks exactly the same even though the Whole30 is over? Maybe I’ll get back to baking paleo treats again one of these days.

    My best meal last week was by far the one I had at local vegetarian restaurant that I have never tried before- I had BBQ Tempeh Salad with some type of Chocolate Pudding dessert. SO SO GOOD. 🙂

    Yum! Everything looks so good. I’ve been eating a good amount of dark chocolate lately too, such a great treat 🙂 I haven’t made a frittata lately but now I’m wanting to try out a new combo perhaps. Enjoy the weekend 🙂

      I don’t feel like the frittatas keep me as full as cooking eggs in the morning but for days when I am short on time its a great option!

    The meal plan does look a lot like the ones during your Whole30 but I think that’s really what it’s all about. You’re taking what you liked from it and just adding in those extras you missed. I think that’s a great thing. Hope you enjoy the weekend! Stay warm.

      Exactly! I’ve been happy enough eating this way and feeling good so I will likely continue while adding back in a few other things on occasion.

      I was actually able to make it to Friday before my first glass on wine! The week was so busy and I was so tired that I wanted to wait until I could truly enjoy it:)

    I need to make my chili this weekend! It’s cold and stormy so the perfect time to do it. Plus the left overs are so good!

      We had it the night of the Super Bowl and it was perfect! And then I took the leftovers to work the next day which was a nice change from the salads I usually eat!

    I tend to cycle trough the same meals from week to week. Every now and then I’ll crave something new and switch it up, but I’m a pretty picky eater and I’m usually satisfied with my favorites.

      I usually do the same thing unless I force myself to try something new! Or I go through phases where I make the same things week after week before switching it up.

    Congrats on making it through the 30 days! I’ve been hooked on dark chocolate lately, and I definitely am not complaining about it!
    I made homemade turkey burgers on Friday, and those were pretty great! I should do that more often instead of buying the frozen ones.

      I definitely prefer homemade burgers to the frozen ones! Although it is nice to keep some in the freezer in case of emergencies:)

    I make the same things all the time, it’s ridiculous! Having said that I do enjoy trying new things too, as long as they are not too complicated! 🙂 your meal plan sounds super healthy and delicious!

      Thanks! It is much easier to make the same things that you know and love, but once in a while its fun to change things up!

      I wish I had realized you lived here! We don’t get out here very often because its so difficult to get flights from Baltimore to Northwest Arkansas. But now that my sister-in-law is expecting a baby in April we hope to come visit more often! I love running around here and this weather is amazing! I think today we might just take a short walk before heading to the airport later this morning…its probably time for a rest day, although I am very tempted to run!

    Yes, I do seem to make the same meals just because it’s easier but I change it up once in a while.

Just over here taking a mid-run break to wring out Just over here taking a mid-run break to wring out my shirt and hair 🥵 Seriously the amount of sweat on this run was unbelievable thanks to a dew point of 75. Have I just blocked out summers like this or is this one worse than usual? Honestly though I’d still take this over the cold!

Are you over the heat yet this year? I think it’s the humidity that’s really getting to me!

Ignorance is bliss, sometimes. (Until you’re dyi Ignorance is bliss, sometimes. (Until you’re dying 5 minutes into your run wondering when it will finally cool off again). But really, this time of year I feel like there’s no point in checking the weather. It’s either hot or really hot. #summerrunning
Another cloudy day at the beach. At least it isn’t raining and windy today. I felt the 95% humidity on this fartlek run (maybe last night’s wine and bad sleep too) so it was a tough one. But workouts are for building fitness, not proving fitness, right?! How do you move on past a hard workout?

Just a few random thoughts (and videos) from Satur Just a few random thoughts (and videos) from Saturday’s race…even though this wasn’t a goal race there are always lessons learned!

First off, my daughter woke up  around 1 am the night before the race. She almost always sleeps through the night now, but out of the 2 races I did this spring she woke up before both of them. It’s like she knows I am going to leave somehow. At least this time she went back to sleep pretty quickly and so did I!

Parking was easy, but it was a long walk to and from my car! (In past years I had parked closer but there was a ton of traffic coming and going)

The start line was so crowded that I couldn’t line up in the appropriate pace area. Many runners had the same challenge so the first few miles were chaotic with some people around me walking and others trying to run faster and weaving. I was just trying not to crash into anyone.

I didn’t bring my own water and wish I did! I needed it due to the weather and the water stops really slowed me down.

My watch never lined up with the mile markers. For some miles it was far ahead and others it was far behind. But overall my watch read 10.09 so it wasn’t too far off overall. 

Hard iced tea is a nice post race option. They also had hard lemonade and Heineken. (A few sips was good enough for me though)
