Meal Planning And Prep Week of 11/16 to 11/22

As you may have noticed from Wednesday’s post, the theme of the week was carbs: mostly potatoes and bananas/plantains. I included a night of pasta just to change things up. Everything was simple (no new meals/foods the week before the race) but some of the baking I did added a little time on in the kitchen.

Meal Planning And Prep Week of 11/16 to 11/22

Sunday: salmon, roasted red potatoes, spinach

Monday: bison burgers, sweet potato fries, mixed veggies (broccoli, cauliflower, carrots)

Tuesday: pork chops, baked potatoes, asparagus

Wednesday: turkey meatballs, pasta, salad

Thursday: chicken, roasted red potatoes, broccoli

Friday: turkey burgers, sweet potatoes, green beans

Saturday: Philly!

Breakfasts: paleo chocolate chip muffins, eggs with bacon and veggies, smoothies

Lunches: salads with grilled chicken and steak, leftovers

Snacks: fruit (apples, pears, raspberries), chocolate chip cookie dough balls, paleo chocolate chips cookies

 Here is the prep I did:

  • baked cookies
  • baked muffins
  • made cookie dough balls
  • chopped peppers
  • chopped cucumber
  • cut up broccoli
  • cleaned and stored raspberries
  • make steak
  • roasted sweet potatoes
  • cooked plantains
  • Rob grilled chicken on Sunday

    I ate so many plantains and potatoes this week it was nuts. Going to continue with that today too. Hope you liked the muffins 🙂

      The muffins were great! Next time I might store them in the fridge to try to get them to last a few more days. Or I’ll just have to eat them faster:)

    I’m not nearly as organized as you are with food prep! I think that will be one of the things I work on in 2015.

    You are so great at food prep! Any recommendations for dinners on the go? I have class twice a week and have to bring dinners with me- I can’t wait to eat after seven! Lol I am an old person with my meal times:)

      Hm I would probably do something like what I do for lunches, which is salads with grilled chicken or steak, or some kind of roasted veggies. I don’t like to heat things up while I’m at work so I just bring stuff that I am ok eating cold. For our lunch prep we cook the chicken and/or steak on the weekends, chop up veggies, and I might roast some sweet potatoes or broccoli as well.
