Labor Day Weekend Meal Prep and MIMM

I’m a little thrown off this weekend with the extra day off, but I’m not complaining! We did groceries and meal prep on Sunday, along with some other cleaning and errands, so hopefully Monday can be nice and relaxing. Here’s what’s on the menu this week:

Meal Plan Week of 9/1-9/6

Sunday: Salmon, sweet potatoes, asparagus

Monday: Sundried tomato and onion stuffed chicken, butternut squash

Tuesday: Paleo taco salad

Wednesday: Easy chicken bake with roasted red potatoes

Thursday: Pork Chops and Roasted Veggies with baked potato

Friday: Pasta with meatballs and salad, also  try some sweet potato noodles

Saturday: Wedding in NY

Breakfasts: Smoothies, Eggs Frittata (based off this recipe but used sweet potatoes and left out some of the veggies), maple raison acorn squash pancakes

Lunches: Salads with steak, turkey burgers with salad or veggies, leftovers

Snacks: black bean brownies, paleo chocolate chip cookies, paleo muffins

Prep:

  • washed, cut, and stored fruit
  • cut up butternut squash
  • made pesto for Monday’s dinner
  • minced garlic and made spice for taco salad
  • cooked turkey burgers
  • made egg frittatas
  • cooked steak
  • chopped onions for Monday’s dinner
  • made pancakes
  • baked cookies, muffins, and brownies

I’m planning to do a little more prep on Monday (cutting up more of the veggies for some of the meals) but it’s nice to have most of it done. After making a mess in the kitchen I cleaned it thoroughly which is always a good feeling. We also cleaned up most of the apartment and I went through my clothes to get rid of stuff I don’t wear anymore.

I have no idea how I was able to get rid of this much stuff and still have more clothes left.

We also ended up going out to dinner on Saturday night to McCormick and Schmicks since we had a gift card. Our meals were awesome but I was too busy eating to take any pictures. Then on our walk home we tried to take a selfie but it was so crowded and we were trying to avoid randoms in the background,  so this was the best we could do.

And an easy run tomorrow means wine tonight! Aren’t three day weekends marvelous?

    Cleaning out excess clothes always feels so good! I love making room to you know, buy more clothes 🙂
    Nice meal prep! I purposely made way too much for dinner last night so I could eat leftovers for a few days.

      Hahaha I know- my husband was like “oh if you threw all those clothes out you shouldn’t need any more” meanwhile I’m planning to go to the mall today. Whoops.
      I love having leftovers to eat later in the week. I just struggle with how much to make that I will have some leftovers but not too many!

    Sounds like a super productive Sunday! I have spent the weekend moving out of my old apartment, and today will be spent moving into my new one. Exciting, but also exhausting. Food prep won’t happen, unfortunately, so I’ll be eating the basics this week and planning how to get re-organized for next weekend. Happy day off!

      Moving is really tough! I moved every single year from when I started college until I was 25. Hopefully I will just have one more move (into a house) and that will be it for a very long time! Although after living in our current apartment for 5 years I have a feeling moving into a house will be a real pain.
      Hope the rest of the move goes well and you get settled quickly!

    I’m off today, doing my deep cleaning this morning and doing the fun stuff this afternoon! I’ve already tackled the living room and kitchen, but now it’s time for me to tackle to closet. I’m sure I’ll have a TON of stuff to get rid of too.

      Its such a good feeling to do a full clean up and get rid of a bunch of stuff! (Although it can be annoying and very tiring). I’m rewarding myself for cleaning out my closet by going shopping today. Ha. My husband just doesn’t get it.

    Looks like a great week of meals ahead, I think you will like the sweet potato noodles! I haven’t done a taco salad in a while so I think that might have to go in my schedule this week.

    Wow it’s great that you’re so organised when it comes to food prep. I totally feel you on the whole clearing out clothes business, it’s pretty unbelievable how much you can accumulate but now you have an excuse to buy some more clothes!
    Today will be spent painting my wardrobe (never fun) but I have a gym class in the evening 🙂

    Ah, you make me want to be better about planning meals!! This is my weakness. Imagine how easy my weeks would flow if I had my meals planned instead of facing the 5o’clock hour every day with a “what are we going to eat?!” Maybe I’ll have to just make myself do this and find one meal a week to try out.

      You should definitely try meal planning! I actually find the planning part to be easy, its the prep that can be annoying. But its really helpful to go to the grocery store with a list of exactly what I will need each week!

    Was so so so so happy to have a 3-day weekend, but I ended up catching a cold from a colleague during the week I guess because I’ve spent most of the day in bed with a box of tissues 🙁 Hoping to kick this thing fast!!

    Your giveaway pile is huge! It must feel so good to clean out your closest. I know I always feel so much better when I de-clutter and get rid of things I don’t need anymore!

      It is such a good feeling to have a clean closet. I felt like it was so much easier to pick out what to wear to work this week because I could see exactly what I have!

    I’ve always wanted to go to McCormick and Schmicks! How was it? I’ve seen so many amazing instagram photos from there and it looks heavenly! Fabulous food prep by the way 🙂 you’re an inspiration

      McCormick and Schmicks was really good! They have a lot of seafood so if you like that you will be really happy! I’m not big on seafood but really enjoyed the steak:)

    Those all sound delicious! I made spaghetti squash with an arugula and sundried tomato pesto with turkey meatballs this weekend. One of my favorite meals!

This is my first big marathon in 10 years, my first time traveling to a race in 10 years, and my first time spending the night away from my kids. And of course I’m tapering so I can’t run off the nerves 🙃 #marathontraining #taper #richmondmarathon
Looked like fall, felt like summer 🍁 I was definit Looked like fall, felt like summer 🍁 I was definitely overdressed for this run but it was nice to not wear gloves or a headband! This was the run I needed a week before my marathon. After last week’s disaster of a long run it felt great to just run an easy 10 miles. (And these days 10 miles feels like nothing). I think I figured out the fueling and shoes 🤞so nothing left to do but take it easy, carb load, and get in the right mindset! Is it unseasonably warm where you are?

Yesterday’s long run was not what I wanted it to b Yesterday’s long run was not what I wanted it to be. The plan was to take the day off from work, head to the trail where I could run 10 uninterrupted miles at MP (16 total) and practice my race day fueling while wearing my race day shoes.

What actually happened? All week I was stressed about this run and the condition of the trail. We had lots of rain on Thursday, and Friday was forecasted to be very windy. I tried to get in the best mindset possible, reminding myself that I won’t be able to control the conditions on race day. Meanwhile, I haven’t been sleeping well thanks to my 2 year old waking up every night, and my watch has been basically telling me that I’m losing all my fitness and need a week of recovery.

While I started the run feeling pretty good, after 11 miles (7 at MP) my stomach turned and I almost got sick on the side of the trail. I just couldn’t recover from that. The best I could do was run the rest of the miles easy, and needed some walk breaks. On top of that, my shoe kept rubbing my foot on top and I stopped twice to retie it. This has never happened before and now I’m questioning what shoes I should wear for the race. The trail was also in rough condition with several trees blocking it, lots of wet leaves, and rocks/sticks that I had to look out for.

I just can’t believe how bad I felt for the last 5 miles of this run and I can’t pinpoint the cause. Am I overdoing it with the fueling and can’t handle it on harder effort runs? Was it something I ate recently? The hard part is there’s no time to really try something different before the race, as all I have left is a 10 mile easy run next weekend.

I’m trying to remember that one bad run does not take away from all the good runs this training cycle. I’m using today to reset and move on so I can make the most of my last 2 weeks of training. It’s not the way I wanted my last big long run to go, but I suppose it was good practice for pushing through even when I felt pretty awful.

Spent almost every step of this 21 mile run questi Spent almost every step of this 21 mile run questioning my life choices. Like waking up at 3am to run 12 miles on the treadmill and 9 outside. This was a crazy week with a kid that wasn’t sleeping great and fighting a cold and super busy days at work. My legs were just tired the whole time today. It was really hard to run outside after so many treadmill miles and my pace was much slower than inside.

I reminded myself that this is peak week. It’s supposed to feel hard. If it was easy everyone would do it. I ran 53 miles this week and am not injured. The weather is perfect. I’ve gotten in every planned run of this training cycle so far.  I get to do this. 

And I managed to finish strong with my last 3 miles the fastest of the (outside) run. I owe that to a solid fueling plan and taking all my gels even when I really didn’t want to.

3 weeks to go until race day!
