Meal Planning and Workouts Lately

Last weekend I was away, so meal prep didn’t happen. But I still came up with a meal plan! (Sort of.) I used a napkin at the airport bar to write down some easy meals for the week and then jotted out a grocery list. I then placed an online order for groceries to pick up the next day after work. Well worth the $4 surcharge if you ask me.

 Sunday: traveling

Monday: got carry-out from a bar near Rob’s office (I had PT at 6pm and Rob was getting home late, so no time to cook)

Tuesday: grilled chicken, baked potatoes, green beans (we wanted to have chicken to use in salads for lunches so Rob cooked a bunch of chicken while I was at PT)

Wednesday: turkey burgers, sweet potato fries, broccoli/cauliflower/carrot mix

Thursday: chicken thighs baked with red potatoes and veggies

Friday: pasta, turkey meatballs, salad (I had meatballs in the freezer from when I made extras two weeks ago. And I meant to buy a spaghetti squash but forgot, so pasta it was.)

Saturday: Got steaks, mashed potatoes, and some kind of spinach/orzo salad from Whole Foods and stayed in to celebrate Valentines Day

Luckily I had some things in the freezer for breakfasts and lunches. It was still kind of tough on Monday when we hadn’t been to the store yet, but it worked out ok. 

Since I don’t have any prep to share, and I skipped my weekly workouts last week, I thought I would just share an update on what I’ve been doing. If you notice below, I got some “Suz workouts” in there. Luckily she has been really flexible working with me while I’m dealing with all this PT stuff:) Also, I guess 22 miles seems to me my comfortable mileage right now. Is that what happens when you stop obsessing about the numbers and just run?

Sunday 2/1: 55 minutes Pure Barre

Monday 2/2: 20 mins elliptical, 5 miles on treadmill, glute work  PM: 75 min hot yoga

Tuesday 2/3: 4 miles plus Suz workout #1

Wednesday 2/4: Physical therapy: 2 miles on Alter-G plus stretching

Thursday 2/5: 4 miles PM: 75 mins barre yoga

Friday 2/6: 20 min elliptical, Body Pump

Saturday 2/7: 7 miles trails

Total: 22 miles

Sunday 2/8: 4 miles trails

Monday 2/9: 30 min online barre3 plys Suz workout #2, PM: 3 miles on Alter-G, PT exercises

Tuesday 2/10: 3 miles on Alter-G, PT exercises

Thursday 2/12: 4 miles, PT exercises

    We actually haven’t had turkey burgers or meatballs in a while so that was a nice reminder! Too funny that you meal planned on a bar napkin 🙂 your workouts look great and very well rounded.

      Yea I realized I didn’t have any paper so a napkin was my only option! Whatever works, right?:)

    If I can swing it, I usually try to do my food shopping in advance of going away for a couple of days just so when I get home, things are in order in the kitchen so I don’t freak. If I am going away longer though, it’s harder because I can’t keep fresh stuff in the house since it would go bad. In that case, I stock the freezer with frozen vegetables and things like that to relax my mind on the rush to food shop. This worked really well for me when we got home from Disney- I was starving, cranky and needed food from my own kitchen!

      I did buy a few things the night before I went away, so that helped a bit! I was grateful to wake up at home and be able to make some eggs and pack a decent lunch to bring to work.

    Traveling always gets me out of my regular routine! When I’m used to grocery shopping, planning meals out, and prepping, it doesn’t feel like a big deal (most of the time). But as soon as I skip one thing, my whole week gets thrown off 🙂

      Exactly! I have been in such a routine of getting all my food prepped on the weekend that it made it that much harder to be away and not get that stuff done!

    I always get thrown off when traveling, but I try to do the best I can. Love that you are working with Suz! Hope it’s going well!! Sounds like a great week of workouts. It must be so freeing to throw the running numbers out the window!

      I was so surprised that I kept running the same # of miles without even trying! Maybe I am finally learning to just do what feels right instead of focusing on miles:)

    I love the idea of ordering groceries online. Honestly grocery shopping, to me, is the thing I hate THE MOST. I need to start ordering online, I agree that it is definitely worth a $4 surcharge!!

      It is definitely worth it! Some weeks they waive the fee which is awesome. If I can get to the store early enough in the day that it won’t be crowded then I will go in and shop on my own, otherwise I have no problems paying to have someone do it for me!

    I try to have a ingredients for a quick meal or a meal saved in the freezer for when I get back from a trip. It makes getting back into healthy eating so much easier for me!

      It was a huge help that I had a frittata and some meatballs in the freezer! I was glad I had decided to make extras the week before!

    Every week your pictures make me so happy! Let’s trade places for a week 🙂
    I’m normally pretty good with eating when I’m away on the weekends because my boyfriend eats pretty healthy as well. Sometimes I have to force him to eat a third meal with me!
    I didn’t work out once last week. I just didn’t have it in me. But I’m super ready to get back into the groove this week.

    I’ve totally done the airport writing meal plan on napkins before myself. Who needs paper? It works just like a charm!

    My meals have been way thrown off. I have trouble packing lunches that I actually want to eat after they’ve been sitting in the work fridge for hours too. Also we need to run together soon…I haven’t been running much and need some motivation to brave the cold!

      I hate that too! I try to figure out which meals I enjoy eating at work and make those as much as possible. I also hate using the microwave at work (its always gross and there is usually a wait to use it) so that limits my options a bit.
      I feel like I never run outside anymore lately! And with last night’s snow I think the sidewalks will be icy for days. Im hoping to get out on Saturday morning but I think its gonna be like 9 degrees. Are you planning to run this weekend? I have a 1/2 marathon in 3.5 weeks that I’m SO not ready for!

        Yep I’m running a half soon that I’m really unprepared for too! I have the same microwave issues at work, ugh. I’ve been liking chilis or sandwiches again because I can never make a salad that is completely satisfying after sitting. I am planning to run this weekend. I kind of have been watching the weather to pick which day but probably Saturday morning.

19 miles! 7 on the treadmill, 12 outside, 1,272 to 19 miles! 7 on the treadmill, 12 outside, 1,272 total feet of elevation gain. Amazing weather. Listened to Life of a Showgirl on the treadmill and had some podcasts saved for my outside run but couldn’t get my headphones to connect. This was challenging by the end and I kept thinking how hard it would be if I needed to run another 7 miles today (and all miles at a faster pace) but this is why we train. Feeling like I’m in a good place with 6 weeks to go! How was your run today? #run #marathontraining #longrun
