Over the weekend I tried out a few new recipes. Ok, so it was only two (and both were from Michele) but I also made an older recipe for the first time in a while. Other than that my food on Monday wasn’t anything too exciting. As usual I ate about 3 breakfasts and 4 snacks:)
Pre-run was a quick cup of coffee and a banana. Most days I haven’t been eating before I run in the morning but if I feel like I need something I’ve found I can eat a banana immediately before I run and I have no issues.
Post run (while getting ready for work) was a smoothie. I actually made this on Sunday to save some time on Monday morning: frozen bananas/berries/spinach, protein powder, almond butter, ginger, and OJ.
The first new recipe I made over the weekend was Michele’s Paleo Pumpkin Chocolate Chip Breakfast Bread. You guys know I’m not big on pumpkin, but I had to give this recipe a try and I’m so glad I did.
Late in the morning I ate a gala apple when I got hungry and it was too early for lunch.
Lunch was leftovers from Sunday’s dinner: Crunchy Cashew Thai Quinoa Salad with Ginger Peanut Dressing with chicken.
Afternoon snack #1 was a green anjou pear.
Afternoon snack #2 was a peanut butter cookie LARABAR.
Dinner was burgers with sweet potato fries and mixed veggies. Usually we have this meal later in the week but it was a nice change to eat it on a Monday.
The second recipe I tried this weekend was these Ultimate Soft and Chewy Chocolate Chip Cookies. Rob gave these two thumbs up and commented that they made the house smell really good. I think that the fact that he even noticed says a lot.
Do you tend to eat the same meals on the same days of the week? (We usually save easier meals like burgers and fajitas for Thursday when we don’t have the energy to try anything crazy!)

Do you ever bake just to make your house smell good?

I definitely have multiple breakfasts and snacks. In fact, sometimes that is my entire day before dinner, like 2-4 of each! If you throw in breakfast for dinner days, the amount of eggs, pancakes, oats, and yogurt I consume is probably hideous…

I literally could eat “breakfast” food all day long. I think I only throw in the other stuff for “societal norm.” And then on a day when I’m baking.. well then its all baking all breakfast all day. And YES, I mean I love to eat my baking, but I also bake for the smell, the comfort, and the creativity.

That pumpkin bread looks so good as well as that quinoa salad! I eat dinner at work with clients 3 nights per week so I don’t need to cook those nights but for the other nights my husband and I tend to stick to easier meals that we know we like- things like stir frys, tacos, loaded salads. I love the smell of fresh baked goods in the house, the best! I almost always have an afternoon snack and an evening snack!

I do bake to make the house smell good, however after two months of baking I am kinda over it. I graze all day with no specific meal plan in place. Dinner is usually the same rotation in my house. Picky eaters. Have a great day

I was toasting pecans yesterday to put in a salad, and I love that smell. It doesn’t take long to toast and about 2 minutes into toasting the smell is filling the kitchen 🙂

I love baking when the weather gets a bit cooler and it’s time to get all cozy! And I always think about how nice it must be for the kids to come home from school to the smell of cookies or banana bread in the oven. It’s probably a really comforting feeling.

Larabars Peanut Butter are one of my favorite snacks. Some days I snack all day long and some days I have breakfast foods for dinner. As long as you get good nutrition I think that’s ok.:)

I usually do the same lunches during the week (usually salad with veggie burger), but I try to rotate dinners. I’m a big snacker during the day and typically have a mid-morning snack (usually a smoothie or bar of some sort) and mid-afternoon snack (usually a Lara or Kind bar). Aaaaand then I snack after dinner on some chocolate, oops!

I usually eat the same meals during the week and get more creative on the weekends! And I am totally about grazing all day long. I have 5 or 6 small 200-400 calorie meals throughout the day. 2 breakfasts, lunch, snack, and dinner. And yes – best part about baking is the smell (and of course eating!) .

I think when you get up early there is so much time until lunch that it is totally acceptable to eat 2-3 breakfasts.

Lisa, I’m drooling over these recipes; I’m going to have to look these up! I tend to have the same breakfast most of the time (smoothie), just because it’s easy to get it ready ahead of time and run out the door with it. I try to mix up the dinner selections, but I’m just not very creative – ha! Simple is better!! Thanks for sharing these ideas!

The quinoa salad looks so good. I am bookmarking that recipe. I love ginger and sesame flavoring. Have you ever gone to a picnic and had that ramen noodle asian casserole? If you have had it, I am sure you know what I am talking about! This recipe reminds me of a healthier version of that.
