It’s Saturday morning which means its time for some meal planing and prep!
Meal Planning Week of 12/7-12/13
Sunday: Salmon, roasted red potatoes, roasted broccoli
Monday: Rosemary Chicken with Vegetables
Tuesday: Spaghetti squash with ground turkey and spinach, with tomato sauce
Wednesday: Paleo chicken tenders, baked potato, asparagus
Thursday: Burgers, sweet potato fries, mix of broccoli/cauliflower/carrots
Friday: Pasta, turkey meatballs, salad
Saturday: Out with friends! Rob’s on his own:)
Breakfasts: Smoothies, eggs with bacon and veggies, pancakes
Lunches: Salads with steak or chicken, leftovers
Snacks/Desserts: Paleo chocolate pecan bites, almond butter muffins
Meal Prep:
-chopped veggies (peppers, cucumbers, broccoli)
-cooked steak
-made plantains
-baked almond butter muffins
-roasted spaghetti squash
-cleaned and stored berries
-made chocolate pecan bites
-Rob grilled chicken on Sunday mooring (not pictured)
-I made pancakes on Sunday morning and made extra to eat during the week (not pictured)

Lately my family has been eating so much that I can’t make enough to have leftovers, which is good I suppose because it means they’re enjoying their food! The one thing I always have leftovers of is spaghetti squash I suppose because my kids don’t eat it. Honestly it’s not my favorite either so not the greatest thing to have leftover of!

I usually find that a spaghetti squash is great for dinner for two plus leftovers for lunches the next day! I find that some spaghetti squashes are better than others, but its one of those foods that I never really mind eating, but I don’t get super excited about it either:)

I really like to have leftovers of squash or sweet potatoes. Mostly because they take so long to bake in the oven!

Any meal that has leftovers I am a fan off. Neither of my brothers like leftovers but I LOVE them. My parents are always happy when I come home because I don’t mind having leftovers for lunch. I actually prefer it. This might be because I hate seeing any food going to waste.
This weekend I am going to make a copy cat recipe off the TJ Peppermint Pretzel slims. Fingers crossed they turn out well.

I have come to enjoy leftovers over the years, and would much prefer to eat them rather than wasting food and have to cook something else! I do get bored when I eat the same thing a lot so one or two meals of leftovers is about all I can handle:) I hope the recipe works out!

I really like having leftover sweet potatoes and anything asian. Yum. We have been holiday baking up a storm over here. I think we have another day’s worth to go before we are finished 😉

I literally almost added the same exact paleo chicken tenders to our meal plan, but changed it up last minute. Hah!
To answer your question, I sadly haven’t made one batch of Christmas cookies or treats this year. I really need to get on it though. Especially since the babies may be coming sooner then though.

The chicken was really good but didn’t come out as crispy as they looked in the picture. I couldn’t imagine having the energy to bake right now if I were you! But good for you if you get around to it!

We made gingerbread people last week which was really fun! For leftovers, I like to make a huge batch of quinoa salad or a soup/chili. Simple meat/veggie dinners we tend to finish off. I guess I’m not used to making enough for more than 2-3 people, and we all have good appetites. 🙂

Usually things like quinoa or anything in the crock pot we end up with tons of leftovers too! And my mom made a huge lasagna this weekend so we got sent home with lots of leftovers of that as well! Gingerbread people sound like so much fun to make!

Sounds like a great week! I really need to learn how to make spaghetti squash! I’m still in search of a nice dessert to make for Christmas since I’ll be with my boyfriend’s family this year!

Spaghetti squash is pretty easy! I cut it down the middle (long-ways) and take out the seeds, and roast it face down for 20-25 mins on 425. Then I usually just eat it with ground turkey and tomato sauce or something simple. There are just so many good/fun desserts out there (especially on pinterest) it can be a little overwhelming!

When it comes to leftovers, I try to make sure I have some sort of a protein left. It’s been very difficult lately because my husband has been working a lot and comes home absolutely starving. I always find it easier to use leftovers for breakfast or lunch using leftover meat.

Great ideas! And I am with you on the protein. Whenever we have leftover chicken, steak, or ground meat I use it in salads for lunches. You should definitely make the pecan bites, they are really good!
