Almost two weeks later, I am finally getting around my posting the recipe for Oatmeal Walnut Muffins I created on a whim. This was one of those recipes that I came up with just by using what I had in my kitchen (which wasn’t much- we hadn’t gone grocery shopping) and lucky enough I wrote down the ingredients because they came out great!
These are made with whole wheat flour, coconut sugar, and coconut oil, along with other healthy ingredients. None of the flavors are overly powerful, and these muffins can be described as slightly sweet with s subtle hint of cinnamon. While I added walnuts and raisins, you can add any nut or dried fruit that you choose!
This recipe makes 12 muffins, and they lasted about a week. I kept a few in the fridge so I knew they would last a few more days.
They are perfect for breakfast, a snack, or a sweet treat at night!
[yumprint-recipe id=’9′]Have a great weekend!
What are your favorite kind of muffins?
What is one thing your will be baking or cooking this weekend?
I’ve been making a lot of no bake stuff but was thinking of making some muffins again since its been a while. Looks delicious!
I’m loving the no bake stuff lately too!
These sound so hearty and fulfilling. but I think that I would sub out the raisins for blueberries 😀
That sounds really good! I actually made muffins with blueberries yesterday and they were a nice change:)
Love the ingredients in this recipe! I need to make more muffins again, I go through phases with my baking. Have a great time this weekend!
Thanks! I definitely go through phases with baking as well. Lately I have really been liking muffins and bars. Usually I stick with things like cookies and brownies.
My favorite is an old family recipe. My mom always made them on holidays and there were always leftovers. I’d keep going back to the kitchen to eat more throughout the day.
Thats awesome that you have an old family recipe! Love those!
Yum! I love oatmeal muffins and these look so healthy and delicious! I’ve been baking a lot of muffins lately, they’re so good with all the summer fruits.
I made your oatmeal blueberry chocolate chip muffins yesterday! They’re so good!
Holy yum these sounds delicious! I’m a big blueberry muffin fan… I don’t usually eat muffins but when I do, I like dense berry muffins, cut in half, and toasted. I’m not particular at ALL! I will be making date balls, cooking homemade stir fry (for meal prep for next week – this is the weekend!) and hopefully making some yummy no bake PB bars for my boyfriend : ) Hope you have a fabulous weekend!
All your weekend baking and cooking sounds amazing! Enjoy!
I love using up stuff in the cupboard/fridge without having to go get groceries! It’s like a game to me and when food turns out, then I feel like a champ. These muffins look great. I’m such a sucker for baked goods!
Its always nice to be able to use what you have and not have to buy extra ingredients!
mmmmm… I’ve never had a muffin I didn’t like. These look awesome! No matter what kind of muffin I make I always sprinkle brown sugar on the tops before baking them. It’s like the cherry on top!
Ooh that sounds so good!
Favorite muffins would have to be double chocolate with chocolate chips. I am a huge proponent of chocolate if you have not yet noticed. However these muffins looks awesome also, I love the addition of some sort of nut in a muffin!
I love chocolate too! I’m not as big on it early in the day, but I think I would love double chocolate muffins as an afternoon or evening snack.
This sounds so yummy. I love a quick go to snack. I will have to try this one.
I hope you like them!
These look delicious! I always love a good muffin recipe to make snacks for my kids. Thanks for sharing 🙂
Muffins are such a great treat for everyone! I hope you like them.
I love chocolate. My aunt found me these chocolate muffins with chocolate frosting (okay it was pretty much a cupcake) but I ate it for breakfast! I plan to lots of baking this weekend. Made some blondies last night.
I love blondes! And chocolate muffins/cupcakes sound delicious:)
I don’t think I have a favorite muffin, I pretty much like all of them :). I do love muffins that have nuts in them though. I’ve been making different versions of Running On Veggies’ peanut butter banana bread. It’s embarrassing how many weeks I’ve made it since I few saw the recipe though haha. I’ve the original then I made a cranberry walnut version, a carrot cake version, and this week a mango peach. I have a big problem when it comes to breads, but at least I can justify it a little bit since they’re all healthy ingredients, which is why yours looks great 😀
Mmm all of those sound so good! I also end up making the same things over and over when I find something I like:)
Those look delicious! I always feel like I can’t eat muffins because they’re pretty much carbs and sugars, but these look nice and healthy! Thanks for sharing!
Its definitely nice to know that the ingredients are healthier so you can enjoy them without any guilt!
These look and sound amazing (and easy!), Lisa; thanks so much for sharing the recipe. Pinning now!
I hope you enjoy them!
