Almost two weeks later, I am finally getting around my posting the recipe for Oatmeal Walnut Muffins I created on a whim. This was one of those recipes that I came up with just by using what I had in my kitchen (which wasn’t much- we hadn’t gone grocery shopping) and lucky enough I wrote down the ingredients because they came out great!
These are made with whole wheat flour, coconut sugar, and coconut oil, along with other healthy ingredients. None of the flavors are overly powerful, and these muffins can be described as slightly sweet with s subtle hint of cinnamon. While I added walnuts and raisins, you can add any nut or dried fruit that you choose!
This recipe makes 12 muffins, and they lasted about a week. I kept a few in the fridge so I knew they would last a few more days.
They are perfect for breakfast, a snack, or a sweet treat at night!

Holy yum these sounds delicious! I’m a big blueberry muffin fan… I don’t usually eat muffins but when I do, I like dense berry muffins, cut in half, and toasted. I’m not particular at ALL! Favorite muffins would have to be double chocolate with chocolate chips. I am a huge proponent of chocolate if you have not yet noticed. However these muffins looks awesome also, I love the addition of some sort of nut in a muffin!

I love chocolate. My aunt found me these chocolate muffins with chocolate frosting (okay it was pretty much a cupcake) but I ate it for breakfast! I plan to lots of baking this weekend. Made some blondies last night.

I don’t think I have a favorite muffin, I pretty much like all of them :). I do love muffins that have nuts in them though. I’ve been making different versions of Running On Veggies’ peanut butter banana bread. It’s embarrassing how many weeks I’ve made it since I few saw the recipe though haha. I’ve the original then I made a cranberry walnut version, a carrot cake version, and this week a mango peach. I have a big problem when it comes to breads, but at least I can justify it a little bit since they’re all healthy ingredients, which is why yours looks great 😀
